The series never went into negative, even in 2020. This may seem implausible against stories of closures, but the statistics count establishments at the end of the year, not the survivors from those operating in January. Closures did happen; there were simply more openings.

The 2024 anomaly stands out: plus 9,053 establishments in a year, four times the usual pace. Part of this increase is explained by methodology, part by a real boom in coffee shops and fast‑food points. The full series is available in the dataset on the website.

2020 is the only decline: minus 20.6% compared with 2019. Recovery took one year, and then growth began that has never occurred in this series: from 2021 to 2024 the per‑person turnover almost doubled. Figures are in current prices, so part of the growth is eaten by inflation, but even adjusted for it the dynamics remain strong.

The gap between the first and last place is thirty‑fold. In the northern districts it is explained by shift‑based feeding and high prices, in the capitals by the habit of eating out. Dagestan, however, appears in the top eight despite low average incomes, showing that willingness to spend on food away from home depends not only on the wallet: there is a developed culture of public feasts and a large flow of domestic tourism.
