Potato and vegetable prices by year: how much a borsch set costs in 2026

As of October 19, 2026, a kilogram of potatoes in Russia costs 49.66 rubles on average, cabbage 38.89, carrots 49.34, and onions 49.22. These are Rosstat data. For borsch, this is enough for the entire set: a kilogram of potatoes, half a kilogram of cabbage, and three hundred grams each of carrots and onions cost approximately 99 rubles. They cost exactly the same in January 2022, but in the summer of 2026, the same set jumped to 146 rubles. Below are the prices by year since 2010, weekly dynamics since 2022, a comparison with last autumn, and answers to frequently asked questions. Each chart has an interactive version at roschart.ru.

How much does a potato cost in 2026

Rosstat records the price every Monday. In 2026, the potato season went as follows:

A pattern familiar to anyone who has bought "old" potatoes in the spring: they get more expensive from January until the beginning of summer, then the new harvest arrives and the price drops. From the July peak to mid-October, a kilogram lost 34.6% of its value. For a ten-kilogram bag, the difference is noticeable: in July it cost approximately 759 rubles, now it is approximately 497.

Potatoes by week from January 2022 to October 2026: summer peaks in 2022, 2024, 2025 and 2026, a record of 95.28 rubles in June 2025 and a minimum of 27.57 in November 2023

On the weekly chart, seasonal "humps" are visible every year, but their height varies. The record for recent years occurred on June 9, 2025: 95.28 rubles. This is almost twice as high as the current price. The lowest price for the same period was on November 20, 2023, 27.57 rubles. Fresh values for each week are available in the dataset with weekly prices.

A comparison with last autumn is not in favor of the current one. On October 20, 2025, potatoes cost 40.62 rubles, now 49.66, which is 22.3% more expensive. Last year's minimum, 39.48 rubles, occurred on October 6, 2025, and four months before that, on June 9, the price reached 95.28.

Cabbage, carrots, and onions: what about the rest of the borscht basket

The other vegetables behave similarly, although each has its own character. As of October 19, 2026:

The 2026 peaks for cabbage and carrots occurred on July 13, and for onions and potatoes on July 6. The year-on-year price increase for three out of the four vegetables is approximately the same, 21-22%, and only carrots lagged behind at 12.4%.

If we look at the four-plus years, the situation is different. Onions became the most expensive relative to January 2022: 49.22 rubles against 31.45, up 56.5%. Cabbage, on the contrary, became cheaper by almost a third, but here one must remember the spring of 2022: on April 8, a kilogram of cabbage cost 99.52 rubles, which is the maximum for the entire weekly series. Six months later, on September 26, it was 22.13, which is the minimum. The range within a single year was 4.5 times.

Carrots are the most "stable" of the four: over all the years of the weekly series, their price fluctuated between 32.74 rubles (November 14, 2022) and 80.77 (July 7, 2025). Onions reached a record price of 77.00 rubles on May 22, 2023, and showed a minimum on November 21, 2022, at 28.82 rubles. Rosstat does not state the reasons for such jumps. The usual explanation for spring and summer is as follows: stocks from the previous harvest are running out, and the new one is not yet available. The data does not contradict this, but it cannot be proven with Rosstat numbers.

Borscht ingredients in rubles

To make the figures clear, let's take a set for a large pot of borscht: 1 kg of potatoes, 0.5 kg of cabbage, and 0.3 kg each of carrots and onions. This is a hypothetical example; the calculation is ours, the prices are from Rosstat:

DateSet, ₽
January 10, 202299.11
October 20, 202581.93
January 12, 2026about 90
July 6, 2026146.24
October 19, 202698.67

Over the year, the set has increased in price by 20.4%, and compared to January 2022, it has remained almost unchanged: 98.67 rubles against 99.11. It has become a third cheaper since the summer peak, but July 2026 shows that buying vegetables a week in advance in June and July is unprofitable: the same set was one and a half times more expensive than in October.

If you cook borscht twice a week, you spend approximately 790 rubles a month on these four vegetables at October prices and about 1,170 at July prices. The difference of 380 rubles per family remains solely due to the season.
